Low Calorie Fresh Strawberry Shortcake


  • Angel Food Cake
  • Chopped fresh strawberries
  • Fat-free Cool Whip or Fat-free whipped cream

Place a piece of Angel Food Cake on a small plate. Sprinkle strawberries on the top and sides. Dollop top with whipped cream or cool whip. Enjoy!

Spring Sangria (Non-Alcoholic)


  • Tea sweet or unsweetened
  • Freshly squeezed orange and pomegranate juice
  • Strawberries, Blackberries and Apples
  • Seltzer or sparkling water
  • Sugar or sweetener

Place sliced fruit at the bottom of each glass (or a pitcher) and pour the tea and juice mixture on top. Next, pour some seltzer or sparkling water over it.

The result is a refreshing drink that’s perfect for enjoying on the patio or lounging at home. By mixing up the fruits you enhance their sweetness, so you don’t need to add much sweetener.

Spinach Smothered Chicken- Keto Friendly


  • 4 chicken breasts or chicken tenderloins
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt, divided
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 4 ounces cream cheese, softened
  • ¼ cup grated Parmesan
  • 2 tablespoons mayonnaise
  • 1 ½ cups chopped fresh spinach
  • 1 teaspoon garlic, minced
  • ½ teaspoon red pepper flakes

1. Preheat oven to 375 degrees.
2. Place the chicken on a cutting board and drizzle with oil.
3. Add the paprika, 1/2 teaspoon salt, garlic powder, and onion powder to a small bowl and stir to combine. Sprinkle evenly over both sides of the chicken.
4. Add cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper and remaining ½ teaspoon of salt to a small mixing bowl and stir well to combine.
5. Spread the spinach mixture onto the chicken evenly.
6. Place the chicken in a 9×13 baking dish. Bake, uncovered, for 25-30 minutes or until chicken is cooked through.
